The process of removing the grape berries from the stems once the grapes have been harvested and brought into the winery. The goal is to minimize the number of astringent tannins that stems can add to wine. The Crusher-Destemmer, Destemmer-Crusher and Destemmer-Only are machines that are used to separate the grapes themselves from the stems and then to split open the grape in order to get at the sugary juice inside that are going to be fermented. This type of machine generally has 3 different functional areas. First is the reception hopper where you dump the grapes and where they are fed to the next section of the machine. : Less expensive machines used primarily on the home winemaking level.
Crusher-Destemmers first crush the whole bunch of grapes then separate the stems from the fruit. Crushing grapes or fruit prior to the primary fermentation helps to break down the fruit pulp and allows the juice to flow out so that it can mix with the yeast for fermentation. For the more serious winemaker making 10-gallon batch sizes or more, a more sizable crusher is needed. A manual crusher with a Destemmer is ideal for making red wine from grapes. Removing stems by hand or with a paddle can be tedious and time-consuming. Leaving too much stem material in a batch of wine can lead to vegetal flavors and a glass of overly tannic wine.
